Marcel Ravin is today considered as one of the best chefs of his generation. With his innovative cuisine, the Martinique native has won two Michelin stars in the magnificent Blue Bay restaurant at the Monte-Carlo Bay Hotel. From the Caribbean to the Mediterranean, the career of an exceptionally gifted gourmet.

Born in Martinique, Marcel Ravin arrived in France at the age of 20, beginning his career in Alsace before working in a series of Michelin-starred restaurants. He has led the kitchen teams at the prestigious Monte-Carlo Bay in Monaco since 2005.

The four restaurants he manages – the Michelin-starred Blue Bay, L’Orange Verte, Las Brisas and the brand new Mada One – each showcase, in their own way, his ‘fusion’ dishes, from flamboyant fine dining to refreshing quick bites.

At the Blue Bay, his genius is evident in the fusion dishes which offer a perfect blend of Mediterranean tradition and Creole influences, such as ‘Blue lobster, pepper leaf, radish and courgettes, octopus and blaff emulsion’.

Marrying high-quality produce with extraordinary fine dining expertise, Ravin also offers a touch of extravagance with his ‘Drunk Charolais beef with rum and sugar cane syrup’ or ‘Coffee roasted beetroot and shiso’.

Completely open to the dining room, the Blue Bay kitchen is both a challenge and a stage. Alain Ducasse, who almost took occupancy of the space, had the following to say about it: “Whoever comes here is either crazy or a genius”.

Marcel Ravin’s latest creation is Mada One, named in honour of the ancient name of Martinique, ‘Madininia/Madiana’, the mythical island in Creole.

Located at the heart of One Monte-Carlo, this innovative concept blends the sophistication of Marcel Ravin’s cuisine with the simplicity of snacking, similar to the philosophy behind a bistro or tea room.

The chef explains the concept as follows: “the idea is to be able to order very high-quality food quickly to eat in or take away. We have taken the concept as far as serving our customers in bento boxes.

Everything has been designed to make our customers’ lives easier, whether they want to sample something or take it with them as they travel.”
